Ingredients
  

  • 2 cups mixed vegetables carrots, peas, corn
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup cream of mushroom soup
  • 1/2 cup shredded cheese cheddar or Swiss
  • 1/2 cup breadcrumbs
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a skillet, sauté onion and garlic until softened.
  • Add mixed vegetables and cook for 5-7 minutes.
  • Stir in mushroom soup, salt, and pepper.
  • Pour mixture into a baking dish.
  • Top with cheese and breadcrumbs.
  • Bake for 20-25 minutes until golden brown
