Ingredients
  

  • 200 g fresh crab meat
  • 1 cup heavy cream
  • 2 egg yolks
  • 2 tbsp grated Parmesan cheese
  • 1 tsp Dijon mustard
  • 1/2 tsp lemon zest
  • Salt and pepper to taste
  • 2 tbsp granulated sugar for topping

Instructions
 

  • Prepare the Custard: Preheat the oven to 325°F (160°C). In a bowl, whisk together cream, egg yolks, Dijon mustard, lemon zest, salt, and pepper until smooth.
  • Combine with Crab: Gently fold in the crab meat. Divide the mixture into ramekins.
  • Bake: Place the ramekins in a baking dish and fill with hot water halfway up the sides. Bake for 20-25 minutes, until the custard is set but still slightly jiggly in the center.
  • Caramelize the Top: Sprinkle granulated sugar evenly on top of each custard. Use a kitchen torch to caramelize the sugar until golden and crisp.
  • Serve: Allow to cool slightly before serving warm.
